Braised Beef Empanadas with Idazabel cheese

Ingredients
- 1 Beef (bottom round or coulotte)
- 3 Yellow Onions
- 1 Bulb of Garlic
- 2 Pinot noir (750ml)
- Cooking Oil
- Salt and Pepper
Directions
Season desired cut of beef(bottom round or coulotte) heavily with salt/pepper
Once seasoned, in hot pan, add small amount of oil and sear off all sides of beef
Place beef in deep pan and add 2 bottles of pinot noir, 3 yellow onions(1/4'd), and one bulb of garlic cut in half(horizontally)
Wrap pan in foil and place in 300 degree oven(no fan) for 3 hours
Let rest in covered pan for 30 mins before shredding and adding back liquid from pan
